Eating// Migas
Sydney and I made migas Sunday morning, if you saw my instagram (seltzer, bed, soap net) you know it was a rough morning for the two of us and Mexican breakfast was a must. Migas is super easy and is pretty much a Mexican flare omelet!
What you need:
Peppers, onion, tomatos, eggs, avocado, corn tortillas, cheese.
Directions:
Chop up all of the veggies. We used half an onion, two bell peppers and about a handful of cherry tomatoes. Then sauté with butter in a large frying pan. Cut two corn tortillas into about 1inch cubes and add them once veggies are cooked. Saute all that for only about a minute or two or else the tortillas will get soggy!
[Dependent on how hungry you are/how hungry you will be in two hours when weirdos like me get hungry again] Decide how many eggs you want (once again we went with 6, I am a fatty and also had them for breakfast this morning) and scramble them in a bowl adding a little big of milk, salt and pepper. Then add the eggs into the pan and bring to a scramble. Once that is all done throw some a bunch of cheese on top and pop into the oven at 350 until the cheese is melted.
That is all ladies and gents, just heat up some tortillas and you got yourself a little migas breakfast taco!
